3 Boneless Pork Loins
1/4 cup Dijon Mustard
2 TBL Horseradish
1 TBL Rosemary chopped
2 tsp Garlic, minced
1 Lemon, juiced
Salt & Pepper to taste
Combine all ingredients, but pork loin and mix well.
Rub pork loin down with Dijon herb mixture and allow to marinate for as few as 4 hours or up to two days. Roast in the oven at 375F for 15-25 minutes depending on thickness (or an internal temperature of 150F is reached).
Remove from the oven once your desired temperature is reached. Allow to rest for 5 minutes. Slice, serve and enjoy.
I often like to serve this with a little added horseradish kick in the form of a horseradish sourcream on the side.
