Cajun Baked Chicken/Guinea Thighs

This is a delicious mildly spicy recipe sure to give you delicious and tender chicken thighs (you can also substitute Guinea in this recipe for a delicious variation)

 

Ingredients: 

  • 2.5 White Oak Pastures Pastured Chicken/Guinea Thighs
  • 1/3 cup White Oak Pastures Cajun Seasoning
  • 3 Tbl Olive Oil
  • 1/4 - 1/2 cup Water
  • Salt & Pepper to taste

Instructions:

Remove your chicken (or guinea) thighs from the package and place in a non reactive container. Toss with olive oil then season well with cajun spice rub and S&P to taste. Allow to marinate for 1-2 days.

Once marinated and ready to cook, place seasoned chicken (or guinea) into an oven-safe dish. Add water to roasting pan then cover this dish with foil and bake at 325F for 1-1.5 hours or until tender. Remove thighs from pan. Thicken the pan juices with a roux and serve as a gravy on the side.
