At White Oak Pastures, we use the animal impact of pigs to regenerate land and keep our soil and pastures healthy. So how do hogs fit into our planned grazing strategy?

Eloise Harris, mother to Will Harris, used to talk at length about the generational loss for cooking at home. Growing up, I remember her saying “I can cook everything from a cow from the nose to the tail. My daughter-in-law can cook hamburgers, roasts and a few steaks, and my grandchildren, well, they are doing good to simply brown some ground beef for a taco.” While none of us liked to hear her talk about our inability to cook, we all knew she was right.

Challenges have never prevented Will Harris from backing down from any endeavor he considered advantageous for his family, his farm, his animals, and his community. When approached by the Oriol family, who traveled from Spain through the United States, searching for a farm to partner with in raising Iberico pigs in the United States, there was much to consider. There were numerous facets to encompass in order to make this union a success. Members of the White Oak Pastures team had the opportunity to attend the Memphis in May World Championship Barbeque Cooking Contest. Brian Sapp (Director of Operations) and Ban Stewart (Quality Control Manager) assisted in cooking two of our Heritage Breed Hogs with BBQ Hall of Famer, Myron Mixon. Myron, who hails from Unadilla, GA, is the winningest man in Bar-B-Que, a successful cookbook writer and widely popular TV personality on several cooking shows and competitions. His team’s official name is, Jack’s Old South and together they have won more competitions than any other team in the world.

White Oak Pastures’ Grassfed Beecon Grind was one of the three finalists out of twelve competing in the Meat and Seafood category in the University of Georgia’s 2018 Flavor of Georgia Contest. The final round was held in Atlanta where Georgia Commissioner of Agriculture, Gary Black, designated March 20 as Flavor of Georgia Day. Judges evaluated entries in select categories based on their taste, commercial appeal, innovation, market potential, and Georgia theme.
